Getting rid of coilover kit

So about 2 months ago I bought a 99 528i from good ol' craigslist and boy did I get a steal! Body has 210k miles, engine has 110k miles, and apparently when they dropped in the new engine, they replaced damn near everything underneath. There are even still tags on the rear control arms! The only problem is the lowering coilover kit.

I'm 6'4, so a lowered ride doesn't do my knees any favours. This is my daily driver. I'm considering getting stock struts and shocks from a junked or parted out e39, but I don't want to have to replace them again any time soon. What does everyone recommend for replacement struts/shocks? Looking to keep this project under $500. Can get front/rear shocks/struts from parted out e39 for $200.

Next time I have her up on jack stands I'll take pictures of the bone dry undercarriage, even after putting 1k miles on since I bought her. Best $1700 I ever spent.
