Widescreen swap on E39.

Hi.

I've been trying to find information on swapping out the OEM BMW Widescreen Navigation unit for a Dynavin or Avin unit.
I know that on both I will lose the OBC information on screen (limited retained on Dynavin N6-E39) but I'm told it will be retained in the dashboard display to click through.

What I cannot find out though is-
1) how do I set the time and date on a dashboard display only?
2) how (if at all) can I reset the fuel consumptions, timers, mileage etc?
3) will the dashboard display default to clicking through everything available by the indicator stalk button, or will it retain the last custom (shortened) list of only the OBC items I'm interested in?

A couple of people have suggested the two dials in the dash might do it but they don't - the left one resets the Tripmeter only and the right one activates the Check Module only.
Some people told me the Mid unit could go on living in the glovebox, but I don't have a Mid unit - I have the full widescreen Navigation unit with reversing camera. (Unless the OBC is a module living on its own somewhere maybe?)

The problem seems to be that purchasers of the N6 or Avin units are owners replacing the standard radio and Mid and no-one has swapped out a OEM widescreen display.
Can anyone in this Car Audio & Electronics advise me?

I really like the Avin unit (I'm an Android person) but I do also like the OBC info such as fuel range remaining and fuel consumption as I'm on the road a lot.

Why do I want to swap?
I need hands free for the phone but I don't like the add-on units that I have to change to the CD input first before answering the phone all the time.
My Navigation doesn't have a Navi DVD and according to everything, the last one produced is 2014 anyway and at an exhorbitant price. I like Google Maps and its free.
My CD stacker doesn't work and its old hat tech anyway.
My Car:
Wide screen display.
Sat Nav in the luggage area. *But I don't use it - no DVD with it.
6 Stacker CD player in the luggage area. *But it doesn't work.
I have the OEM BMW TV Tuner.
I have the OEM PDC front and rear and OEM reversing camera.
No phone / no BT.
The car is not pre-wired for phone either - ie: no stickers and doesn't have the microphone cut-out in the roof panel next to the sunroof switch.
