Odd cooling problem

First let me say I refreshed the cooling system, top to bottom, less than a year ago, replacing all the plastic parts: new radiator, Stewart water pump, aluminum thermostat housing, new thermostat, belts, etc.

Until recently, the car has never overheated. Highway driving is no problem. But for the past 2 weeks, in city driving, the gauge creeps up past the half way mark, and occasionally goes into the red for a few moments, until moving down again. I do seem to be losing some coolant, but not more than a couple of cups. In the engine compartment I noticed splatters of dried white spots on the Dinan CAI, the edge of the radiator near the upper hose (which is tight), on the fender well, and on the thermostat housing. Like high-pressure spitting. But, again, no big puddles or mess. I cleaned the splatters yesterday and haven't noticed any since then, even though the gauge went into the red briefly yesterday afternoon. No coolant in the oil thank goodness! I suspect a thermostat problem, but thought I'd poll the wise members of the forum for suggestions. Any will be helpful!
